Linda-Haynsworth Krueger and Betsy Hase co-hosted the April Culinary Arts gathering at Linda's beautiful home. The topic was how to spiralize assorted types of vegetables and then how to incorporate them into wonderful, healthy recipes. A spiralizer is a hand-operated kitchen implement which turns vegetables into a variety of shapes and sizes of ribbons, slices and noodle- shaped pieces. The shapes are both beautiful and versatile and can be substituted for pasta in some dishes and also used to add vegetable content to soups and stews. Linda and Betsy demonstrated how to prepare and spiralize the vegetables and also how to store them for future use. Each attendee prepared an assigned recipe that ranged from Shrimp Tom Kha with broccoli noodles, lamb meatballs with beet and pistachio salad to a raw carrot dessert with chocolate drizzle.
