A group of ten accomplished home cooks gathered at the home of Brigitte Lemmerman on Feb. 12 to savor the sunny flavors of Cuban cuisine. Each guest prepared a dish to complete a full menu and share it with the group. From Cuban mojo chicken, classic picadillo, avocado and pineapple salad to Cuban coconut flan, we all enjoyed the bright citrus flavors and colors and different variety of spices. Brigitte added some fresh lime mojitos on ice to compliment the great food. Most of the dishes did not have complicated preparation involved, except the flan prepared by Virginia Felker. She ordered a special covered flan pan and followed the detailed instructions in the recipe carefully. She brought the flan to the lunch still in the pan, so the whole group could hold their collective breath while Virginia did the dramatic unmolding.
