A group of 14 members gathered at the home of Viki Brown with Gerene Leffingwell serving as co-host for a bright and sunny lunch featuring recipes from the Caribbean Islands. The table was decorated in bright colors with flags from nine islands that Viki and her husband had visited in January. The lunch began with an excellent demonstration by Vicki Wittenbrock on preparing coconut shrimp in an air fryer. After they were cooked, we all got to see and enjoy the finished product. Each guest had prepared an assigned recipe and provided some details about their dish as were were enjoying them. Tropical fresh fruits and vegetables were a prominenet feature in the soup and salads along with jerk chicken, pork and pineapple and some great side dishes. We concluded the meal with sauteed bananas with caramelized sugar and rum with homemade ice cream. Several versions of rum punch were also available to sample. The entire meal was gluten-free and we all enjoyed the lighter dishes. Thanks to everyone for their contributions and ongoing interest in new and interesting food.
